I am the Director of an Emergency Shelter. Part of my duties are ...well a lot, but part of my job duties are COOKING dinner every stinkin' day (M-F) for a lot of and I mean A LOT of folks...and I HATE to cook, Really I do. But since I HAVE TO and I get PAID for it....here are some short-cut (simple) recipes that are easy to make for a lot of peeps at one time. Through osmosis I've learned a few good tricks.
